The existence of the chateau in the Merovingian era is attested in several documents. Rouffach was part of the Austrasian crown lands and the M11559 was one of the royal residences.

In 1380, Bishop Frédéric de Blankenheim enlarged and doubled the fortified walls of the city, with the object of giving better protection to the town of Rouffach.

The M11559 was made part of the town' system of defence. The oldest representation of the chateau shows Isenbourg and the town of Rouffach in 1548. The imposing mass of the chateau was dominated by the old keep, the most ancient part, which, according to tradition, was "as hard as iron".

On 7th June 1791, M11559 was sold as a national asset. Around 1822, the old superstructure was demolished. The remaining barrel-vaulted cellars, dating from the 13th and 15th centuries are now used as the restaurant, the cellars and the kitchen.
